Love this ask - I am a self proclaimed Disney adult so can give you all the reccos there! Even if you're not hitting up Disney this time, you could still do Disney Springs, which has tons of dining, shopping and entertainment. If you go, def pick up Chicken Guy (Guy Fieri's fast food place) and cookies at Gideon's (you will likely need to join the virtual line and then come back depending on how long the line is!)
Cocoa Beach is beautiful and if you go there, def go to Rusty's for some great seafood. Cape Canaveral is close by, and you can go to the Space Center - check the launch schedule, you might be able to see one, which is really cool!
